It’s a treat that’s also a slow-burning fuel, satisfying a sweet craving and keeping you energized for hours.
Tofu has a very mild profile, making it a bit of a blank palate - it takes on the flavours of whatever it’s combined with. It makes for a rich, chocolate pudding.
Ingredients:
1 brick sprouted, extra firm organic tofu (any firm tofu will work)
1/3 C cocoa powder
1/4 C pure maple syrup
1 tsp vanilla extract
1/2 tsp sea salt
1/4 C unsweetened oat milk
Steps:
Blend all the ingredients in a food processor or blender on high for 4-5 mins, stopping once to scrape down the sides.
Serve with a glob of nut butter, coconut cream, crushed nuts for crunch, etc.
Store in an airtight container for a few days. Just discard any liquid that forms on the top (like yogurt).
