Creamy Chocolate Tofu Pudding

It’s thick, chocolatey, nutty, lightly sweet & salty, a complete protein, and anti-inflammatory!

It’s a treat that’s also a slow-burning fuel, satisfying a sweet craving and keeping you energized for hours.


Tofu has a very mild profile, making it a bit of a blank palate - it takes on the flavours of whatever it’s combined with. It makes for a rich, chocolate pudding.


Ingredients:

  • 1 brick sprouted, extra firm organic tofu (any firm tofu will work)

  • 1/3 C cocoa powder

  • 1/4 C pure maple syrup

  • 1 tsp vanilla extract

  • 1/2 tsp sea salt

  • 1/4 C unsweetened oat milk

Steps:

  • Blend all the ingredients in a food processor or blender on high for 4-5 mins, stopping once to scrape down the sides.

  • Serve with a glob of nut butter, coconut cream, crushed nuts for crunch, etc.

  • Store in an airtight container for a few days. Just discard any liquid that forms on the top (like yogurt).
